Gluten-Free Lemon Blueberry Cupcakes Recipe


For the Cupcakes:

  • 1 1/2 cups gluten-free all-purpose flour (with xanthan gum)
  • 1 1/2 teaspoons gluten-free baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened (or dairy-free alternative)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1/2 cup dairy-free plain yogurt (or regular yogurt if not dairy-free)
  • 1 1/2 cups fresh blueberries


For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon



For the Cupcakes:

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together the gluten-free flour, gluten-free baking powder, baking soda, and salt. Set aside.
  3. In another bowl, using an electric mixer, beat the softened butter and granulated sugar until the mixture is light and fluffy.

For the Lemon Glaze:

  1. In a bowl, whisk together the powdered sugar, fresh lemon juice, and lemon zest until you have a smooth and slightly thick glaze.

  2. Optionally, garnish with a fresh blueberry or a strip of lemon zest for a bright and refreshing finish.
